Well folks, it’s now October so put on a jumper, get out your Ugg boots and snuggle up with a big mug of pumpkin spice latte! In homage to one of my favourite months, this weekend’s recipe picks are all about the pumpkin!
This vegan recipe is so simple to make but packs a punch with the chilli, coconut and spices. Served with rice and/ or naan, it doesn’t get much more comforting than this!
My version substitutes pumpkin for the butternut squash, mushrooms and lentils for the meat and miso for the anchovies and is as delicious as Jamie’s meaty version! This lasagne yields 6-8 portions and, along with a green salad, is the perfect weekday meal for vegetarians or flexitarians like myself and can even be made vegan!

BBC Goodfood’s stuffed pumpkin looks impressive and is perfect dinner for a dinner party! This could absolutely be served as a main, but I think I would serve it as a sharing starter, placing it whole on the table and letting guests tuck in themselves.
