Pasta with peppers and onions – an easy meal for whole family!

This pasta dish makes a quick, healthy lunch or dinner and both my kids and I love it! It took me all of 30 minutes to make while the kids played this afternoon and they both devoured it!

Kid friendly pepper and onion pasta

Serves 4-6

Ingredients

• 1 tbsp olive oil

• 6 cloves of garlic

• 1 red onion

• two sweet peppers, preferably yellow, orange or red or a combination

• 2 x 400g cans of good quality plum tomatoes

• 1 tsp miso paste

• cracked black pepper to taste

Method

Heat the olive oil in a wok or deep frying pan over medium heat. Meanwhile, finely slice the onion, peppers and garlic. Add the onion to the pan and fry until it becomes translucent, around 4-5 minutes. Add the garlic and cook for one minute. Add the peppers and give everything a good stir and turn down to low heat. At this point I like to put a lid over the cooking vegetables to soften the peppers for around 5 minutes. Turn the heat back up to medium, add the tomatoes, miso paste and black pepper and bring to a simmer. In the meantime, cook your pasta according to the instructions on the packet (I cook around 90g pasta per person for adults and around 50g per child).

Once the pasta is cooked, drain and return to the pan. Add a ladle full of sauce, stir and plate up. I quickly pulse the sauce in the blender for my kids’ portion as they can be a bit suspicious of anything too closely resembling cooked vegetables! I like to add a generous sprinkling of chilli flakes and parsley to my portion and my son likes grated Parmesan cheese. Enjoy!
